Roasted, diced and dried, dehydrated bell peppers are great for adding to soups, stews, marinades, sauces and dips.  You can use dried bell peppers much in the same way as fresh ones.  The rted bell pepper is amazingly versatile food that adds flavor, color and texture to almost any dish.  You'll find them in most Mexican cuisines.  These peppers will double in size when rehydrated.
