Whole cardamom pods can be crushed open to reveal around 25 seeds held together in clusters by a thin membrane and sticky residue, which indicates freshness. The green pods are harvested from the shrub just before they would open if left on the plant, and are left to sun-dry. Cardamom is typically used in Indian curries and Scandinavian sweet dishes.
